Cooking in the margins
The best ingredients often sit at the edge of things: the start of a harvest, the corner of a field, the herbs that grow wild along a garden wall. Moss Margin is built around them.
Our menu is small on purpose. It changes as produce comes and goes, so each visit tastes a little different.
Small growers
We buy from nearby farms and gardens in small batches, then plan the menu around what arrives.
Open fire
Vegetables, fish and meat are cooked over wood embers for a gentle smokiness that never overpowers.
Nothing wasted
Peelings become stocks, stale bread becomes crumbs, and fruit past its best becomes preserves for the colder months.
